Yesterday, I whipped up the easiest meal(s) EVER. Wednesday night I put a chicken, spices, carrots, and water in the crockpot, and I put it in the refrigerator overnight. I am researching/thinking/trying a few organic items, so I choose a cage free chicken and organic carrots. Thursday I woke up took it out of the fridge and turned it on low. I came home to a house smelling wonderful. I felt like such a good mommy and wife. I had made a very healthy meal, and it took literally 5 minutes. The best part was that I was left with extras. So I put chicken, broth, and cut up carrots in two containers to freeze. Later I can just reheat on the stove and add noodles, voila chicken noodle soup. I saved some chicken for sandwiches for Friday's lunch. Also, 4 cups of broth to freeze just in case a recipe calls for chicken broth. Now I have my own homemade broth without all the extra bad stuff that comes in a can. I guess I should look for some recipes that call for homemade broth. I will take sugguestions, especially if I get to use my crockpot!
